Has anyone created a Money in the Bank Ladder Match plugin?
Or does anyone know a loophole where you could essentially run an 8-man ladder match in TNM?

It's not ideal, but you can run an 8-man tag ladder match and then edit the results after the fact.

Is it possible to book the winner when running the match this way?

Without having tested it, I would say yes. In the above example, you could simply book Punk to perform Gimmick - Retrieval/Cage Escape, and then choose a random opponent that he will do it "against". Needs to be edited in Circuit Editor anyway though.
