I had a match between Ultimo Dragon and Silver King end with a submission via front facelock.
I checked that copy of TNM and "May End Match" was NOT checked off for front facelock. I had booked Dragon to win, but not by any particular move.
So why did the match end that way? Has anyone else had something like that happen?

I get that a lot with the old school exports. I think it's something with how submission moves work where certain factors override the "may end match" flag.

...I've had matches end with moves checked "may not end match" but those results have always showed up as "Wrestler A defeated Wrestler B via pinfall/submission" with out saying the name of the move...

Not much to add, other than it happens to me too. I hadn't noticed Phudjes observation though.
Ryan: Wasn't it more normal in the old days to tap to moves or be pinned by moves that isn't normal finishers today?

...I've had matches end with moves checked "may not end match" but those results have always showed up as "Wrestler A defeated Wrestler B via pinfall/submission" with out saying the name of the move... I think every wrestler can do a few basic moves like "hits him with an elbow" and pins after that sort of thing are usually what causes a result of "A defeated B via pinfall" with no move being listed. I think it also is sometimes caused when a wrestler hits a move outside the ring then both wrestlers re-enter the ring then the pinfall takes place.

So many wrestlers back then were kick-punch type wrestlers, so a lot of them have side headlocks and front facelocks as moves, so wrestlers will get caught in them and pass out.
