so, at the Royal Rumble in a couple of weeks, I am planning on John Cena v. Samoa Joe for Joe's WWE Championship in a Last Man Standing Match ...
it has been so long since I have "successfully" used Last Man Standing, so I am curious as to how you guys do this? I tried doing a "death match" once, but that didn't work to well ... any thoughts?

I assume by "Death Match" you mean you select "Texas Death Match" from the gimmick matches and not the "Death Match" option at the match making screen. I don't believe I've ever done it any other way than doing a gimmick match with the ten count.

I have used both the gimmick texas death match, and the death match option to no avail ... I seem to remember at one point using a gimmick with the ten count, but I can't remember ...

Making a gimmick match and naming it Last Man Standing Match (which is just the Texas Death Match with a different name) is the closest you're going to get. A real one wouldn't have to have a pinfall/submission first, but just edit that part out of the results.
The death match option in the match making screen is nothing like a Last Man Standing Match. That's where you need three consecutive falls to win. No ten count involved at all.

yeah, I learned that when I booked it and it turned out incredibly wrong ...
I'll have to check to see if I have a gimmick for Last Man Standing, or I may just use the Texas Death Match and rename it ... I kinda like the pinfall stip before the ten count ...

When was the death match (3 in a row) ever used? I don't remember any american fed ever having that rule?

You can always try FCA Cubed, but that plugin does not work for everyone (including myself )

I looked on the TNMUK site and there is a Last Man Standing Match in the gimmicks section. I may use it in my ppv with Andre the Giant and Abdullah the Butcher.

Andre vs Abdullah: battle to see who gets too tired to stand up first? Oh, gravity... When was the death match (3 in a row) ever used? I don't remember any american fed ever having that rule? This is one of the great mysteries of TNM. I can't recall if Oliver ever explained it. Maybe it was a Japanese thing?

This is one of the great mysteries of TNM. I can't recall if Oliver ever explained it. Maybe it was a Japanese thing? That could be, though I also seem to recall southern-indy for some reason. Sounds like something the rednecks would come up with to draw a drunken crowd ;->

Being from the South (waving my rebel flag), Texas Death Match rules were that pinfalls, while they did occur, did not count. After the pin, the ref would start a ten count. If your oponent did not get up by the ten count, you win.
Then there was the Southern Street Fight Match. The wrestlers could wear whatever they wanted, carry to the ring whatever they wanted to use, and the match would end on pinfall or submission.
Dutch Mantell came up with a novel idea. Take down the ropes, and give each wrestler a bullwhip, and call it a Texas Bullwhip match (wish I could find video).
Austin Idol and the Mongolian Stomper had a boot on a pole match a week before Idol's epic encounter with then NWA champion Ric Flair.
Ah, I have rambled long enough.
